Bikini Recipe

Serves 10 guests

For the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

Ingredients for the Cocktail (makes 850ml, to serve 10)

400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
A few cranberries, as a garnish
Mandarin essential oil, to finish

Directions

Making the Citrus Syrup: Combine the listed components into a pan, heat until it reaches a gentle boil, mixing to dissolve. After that, remove from the stove and leave to cool down fully. Decant into a sealable bottle, seal keeping it chilled, it can be stored for around a month.

For the Cocktail Base: Mix every spirits and syrup into one big jug, leave to sit for one hour, then filter it best through a fine cloth, so it's completely strained.

For serving: Measure 85ml of the cocktail base into a stirring glass filled with ice, and agitate gently for one minute to chill. Pour to a cold coupe glass or equivalent, top with a few cranberries and complete it by giving it a light spray of mandarin oil over the top.
